Picked Radishes
In our spring veggie boxes, we always get tons of radishes! I just LOVE making pickled radishes and eating them on sandwiches. These colourful beauties are a great addition to pretty much any meal that requires a bit of tangy crunchiness. This is a super easy recipe and can be made in under 10min.
Ingredients
1 bunch of radishes
½ cup Apple Cider Vinegar
1 tablespoon sugar
1 teaspoon salt
1 cup hot water
Method
Cut the radishes into slices and put them in a jar. (I’m a big jar nerd and love to keep pretty jars and reuse them, perfect for recipes like these). Combine the apple cider vinegar, sugar salt and water until the sugar and salt are dissolved. Pour over the radishes and leave them to cool. Store them in the fridge for up to two weeks.
Serving suggestions
I love to eat these on sandwiches, in salads, with fried rice, the list is endless.
