Green Crepes

Magically transform the withering greens in your fridge into some delicious pancakes!

Do you have wilting greens in your fridge? That lettuce that never made it to the salad bowl? The last few sad spinach leaves that were just enough not to make a full meal with? Don’t throw them away! Turn them into…. (drumroll) GREEN CREPES! :D

This is by far my most cherished zero-waste kitchen discovery and I have made them so many times, in so many variations that eventually my husband had to tell me “Baby, I’m all crepe-d out”..

Easypeasy goes as follows:

Ingredients:

Pancake mix of choice (Vegan or with eggs)

OR

1) 2 eggs

2) Milk, half a cup

3) Flour of choice, one cup

4) Greens

Method:

Mix the 2 eggs together with half a cup of milk in a blender/food processor

Add flour until the consistency is not too runny and not too thick. It takes some practice getting it just right. If needed, you can add some water or more milk

Then, just add your greens to the pancake mix in the blender, and pulse until it’s smooth

Fry the pancakes in a frying pan by using a soup ladle to make the perfect sized pancake.

TOPPINGS:

  • Small bowl of soy sauce mixed with sesame sauce

  • Spring onions

  • Herby Cream cheese

Usually I make a pile of these pancakes and eat them with different toppings. My favourite topping is herbed cream cheese and spring onion. I love to roll herbed cream cheese in my green crepes and dip them into a soy-sesame oil dressing. Divinely delicious!
