Rhubarb BBQ Sauce
Ok I’m OBSESSED with rhubarb now! This is seriously the most delicious sauce ever, so delicious that I made it twice in a row and we ate it all up before I could take some good pictures, so do excuse the pictures below. I hope you enjoy my handwritten font and illustration in the image description, though ;)
Ingredients:
2 cups Rhubarb, chopped into bits
1 red onion
1/2 cup Apple cider vinegar
2 garlic cloves
1 large tomato/small can tomato paste
1/3 cup Honey/Maple syrup/sugar
Cayenne pepper
Method:
Throw all ingredients together in a big pan and heat until the sauce begins to thicken. When combined with sweeter ingredients, rhubarb becomes nice and sticky when cooking, which is perfect for preserves and sauces like this. You now have yourself the most delicious sauce ever! (Trust me). Let it cool and put it in a jar. It’s good in the fridge for 2 weeks. If it lasts that long… or just eat it straight away. :)
